Roasted Acorn Squash

This simple side dish is the perfect fall or winter vegetable for any dish. It's simple, light and filling. Full of nutrients, vitamins and fun to make! 

Ingredients:
2 medium Acorn Squash - halved and seeded
1 Tbs Olive Oil Coarse
Salt & Cracked Pepper to taste

Instructions:

Brush cut side of squash with Olive Oil. Season with Salt & Pepper. Place cut side down on a baking pan. Bake at 400 degrees for 30 to 35 minutes or until squash is easily pricked with a fork.
