Pizza (Guiltless Pizza, that is, because I’m not messing around with yeast and grains) is one of my favorite food groups! Pizza for breakfast, now that sounds like the start to a GREAT day! This breakfast pizza is not only delicious, but it’s simple and it’s Phase One! I love changing up the sauce and using a mashed avocado instead of tomato sauce. The caramelized onions add natural sweetness and soft texture. While the turkey bacon adds saltiness and crunch. The protein and healthy fats from the fried egg in the center will keep you full for hours. And the Guiltless Superfoods crusts is thin and crispy!
One thing to keep in mind when making this pizza is to put your toppings (on top of the smashed avocado) sort of in a ring with the majority of the toppings on the outside near the edge of the crust, and just a little bit in the middle. Leaving the center of the crust for the egg to sit in without running off the edges.
1 tablespoon olive oil
1/4 yellow onion, thinly sliced
2 slices organic turkey bacon
1 small to medium ripe avocado
1 teaspoon garlic powder
1 teaspoon sea salt, divided
2 Guiltless Superfoods personal size pizza crusts
2 organic eggs
Fresh cracked black pepper
Preheat oven to 425 degrees.
In a small skillet on medium-high heat, add olive oil and swirl pan to coat. Add onions to skillet, season with 1/2 teaspoon sea salt and cook for about 5-6 minutes or until onions are softened and caramelized.
In a second, medium-size skillet, cook turkey bacon at the same time you’re caramelizing your onions in the other pan. Cook bacon on medium heat for about five minutes or until cooked through but not too crispy (as it will continue crisping in the oven). Remove from heat, let cool and chop.
Slice avocado in half and remove seed. Spoon both avocados halves into a small bowl, add garlic powder and 1/2 teaspoon of sea salt. Mash avocado and stir in seasonings to combine.
Put pizza crusts on a large pizza pan. Spread mashed avocado on each crust, dividing half of the avocado onto each crust. Top with caramelized onions and turkey bacon, leaving a little dip or crater in the middle of the crust. Crack an egg in the center of the crust, nestled in the middle of the onions and bacon. Sprinkle with black pepper. Transfer to oven carefully so the egg doesn’t run off the crust.
Cook for 20 minutes (you will have a completely cooked yoke) or for about 16-17 minutes if you want a slightly runny yolk.
