Guiltless Chicken Tenders Recipe

School's out for summer! It's a favorite time of year for people of all ages, as we go outdoors, take vacations, go on hikes, picnics and spend time having fun at the pool, park or beach! 

One of our favorite "finger foods" to take along with us are Guiltless Chicken Tenders. They are a delicious, nutritious and convenient way for us to get in protein and fiber in for the kids and adults. They travel well with an ice pack or in an insulated cooler bag, and they keep great in the fridge as leftovers for the next day or for your next outing. And for those of us that haven't had chicken tenders in years because of the typical all-purpose wheat flour breading and frying, you can now relive your chicken tender glory days with a much healthier version!

By breading your chicken tenders in our Superfood Seed Flour, you immediately add plant-based protein, fiber, omegas, vitamins, minerals, and stabilize blood sugar levels. These Guiltless Chicken Tenders are not only low-carb, they are high-fiber, low-glycemic, nutrient-dense, delicious and baked to crispy perfection! 

Last time we made these, we paired them with mixed roasted vegetables (carrots, kale, sweet potatoes, red onion, and broccoli in a roasting pan, tossed with olive oil, garlic powder, a little garlic salt, and sea salt at 425 degrees for about 25 minutes). If you wanted to do a typical chicken tenders and "fries" combination, slice up some sweet potatoes and roast with coconut oil or olive oil and your choice of seasonings, for the same 425 degrees for about 20-25 minutes. YUM!

Ingredients:

1 lb Organic chicken tenders (you can also slice chicken breasts in half lengthwise) approx. 12 pieces 

1 C Guiltless Superfood Seed Flour 

1/2  t paprika

1/2 t oregano  

1 t garlic powder

1 t black pepper

1 t sea salt

2 organic eggs, lightly beaten

olive oil cooking spray

 

Instructions:

1. Preheat oven to 375 degrees. Coat baking sheet with non-stick cooking spray 

2. Mix together Guiltless Seed Flour and seasonings, paprika through sea salt

3.  Dredge each piece of chicken in the egg, then dredge in the Guiltless Seed Flour spice mixture. 

4. Place floured chicken tenders on cookie sheet, spread out enough so they're not touching

5. Bake for 20-25 minutes, until golden

6. Serve & enjoy!
